Set Grill/Oven to 275

Place the pan into the smoker/oven or on your BBQ grill for 30 – 45 minutes. Stir the pan 2 – 3 times, making sure that the sausage caramelizes evenly.

You will know they are done when they are slightly burnt, and the sauce is sticky and shiny.

Bake/Smoke at 375 degrees for 40 to 45 minutes or until the bacon is crispy.

Pig Skins

Bake. Place the Pigskin on the smoker over indirect heat and close the lid, or in the oven. Smoke/bake until the internal temperature reads 165F degrees F. This usually takes around 2 hours, depending on the size of your pigskin.

Baste with BBQ sauce, and then increase the heat to 400 degrees F and cook for a few minutes.

Wings

Preheat your smoker/oven to 250 degrees F . Place the wings directly on the grill grates or cookie sheet over on a pan, close the lid, and smoke/bake for 30 minutes.

Increase the heat in your smoker/oven to 425 degrees until the internal temperature of the wing reads 175 degrees F. You can rotate or flip the wings as needed to maintain even cooking.

Remove the wing from the grill/oven and serve. You can serve plain, toss in your favorite BBQ seasoning, or hot sauce.
